in the must after
the harvest. The concentration of the must is done in order to increase
the final alcoholic degree of the wines; this technique is spreading
in enology as an alternative to chaptalization. It
can be useful when maturity is not reached, or when rains have diluted the
concentration of the grapes. This technique makes it possible to work on a
liquid phase, at normal temperature, and would not generate aromatic, coloring
or volume losses
